Healthy Minnestrone Soup
Ingredients
Zuccini 1 diced
Onion 1 diced
Bell Pepper 1 diced
Tomato 1 can
Garlic 4 cloves
Ginger 1/10 of a cup
Scallions 1/2 cup
Carrot 1 cup
Cilantro
Lime 1
Salt & Pepper
Put some vegetable oil in a pan, and in low heat saute the onion, till it is brown. Once its brown, put diced zuccini, garlic, ginger, scallions, carrot in the skillet and let it cook for another 10-15 minutes or till the vegetable becomes tender. Pour into the can of tomato and let it cook another 5 minutes. Now puree the vegetable with a blender and bring it back to a boil by adding some more water. Garnish with lime and cilantro, and put salt & pepper according to taste.
